Sometimes organic kombucha scoby can come up for sale, I also have gluten free sourdough starter (eat bread, proper bread, and loose weight!), check my items!Once you receive the grains, prepare sugar solution: dissolve 4tbs Dark Muscovado sugar in a bit of boiling water, top up to 1L with cool filtered water and put the grains in. Never add grains to hot water, it will kill them! The water should be cool or tepid. You can stick with this recipe or use the one below. If you not familiar with grains you should be aware: NEVER use any metal around them, if you wear rings, remove it or use gloves, don't use metal strainer as well.I am very happy to share the recipe and tips, so I decided to update my listing with the recipe:Recipe from my book:1l water (preferably spring, filtered or rain), I use Brita filtered water2-4 tbs water kefir grains55g organic raw sugarpinch of aluminium-free bicarbonate of soda (baking soda)1/4 tsp molasses2 slices organic lemon with rind, washed well2 slices of ginger, unpeeled and washed welldried organic fruit (1 date and 1 fig)Add all ingredients and secure with a lid that will make it airtight - kefir likes an anaerobic environment. If you like to keep alcohol down, don't lid it, but cover with a cloth. Sit it somewhere with a consistent temperature of about 18-21C for 48 hours. After remove the fruits, which you can reuse in energy balls, see my Instagram or eat it, our dog is eating it :) Our pets needs probiotics the same as we do! Strain the grains and bottle it for second fermentation or drink it straight away. For second fermentation you can add a bit of molasses and ginger, mint and lime, any fruits and store for another 24 hours. I prefer not to do second fermentation (only because I drink it straight away, can't wait any longer :) but everyone is different.Grains are living organisms and you have to find your own way to keep them happy. They can grow in size, they can get smaller, nothing to worry about. The grains can regenerate, if they become mashy add some cooked egg shell. You can change the place where your keep them, if they are not looking good, they generally don't like a lot of sunshine.Please note, I will do my best to provide any help, however, I will not take responsibility if you will decide to use coconut products for fermentation. For some reason my grains don't like it. Some of my customers love coconut water kefir BUT they report that the grains are getting mushy over period of time. I have never tried it myself and I can't advise you. Allow at least 3 fermentations for the grains to settle into they new home!I didn't found many tips or troubleshooting online when I started and no one would suggest or help :( So I find my way to keep them healthy! Its only the matter of time and it will come with experience. I add more sugar to my kefir, about 80-90gr as I prefer it a bit sweeter and I swap dried fruits every time. For example if I use dates and figs today, next time I will use raisins, dry apples, apricots, rosehip, whatever you have. Once you strain your kefir you will have to make another batch straight away (you will get into the routine after sometime, that's a promise!)! They can be kept in the fridge, dehydrated or frozen. If I go on holiday I will leave them in sweet water, ginger, egg shell, date and fig for 1-2 weeks, only using bigger amount of grains and less water.
